Mmm tonight was a night that begged for comfort food. It is hard to believe you can feel such a chill after the gorgeous weather we had this weekend, but I was chilled indeed!
With fresh dough and swiss chard that we washed and trimmed this weekend (thanks for the memorable tip Rachel Ray!) I was primed to make a pizza until Nick suggested we make a "Spinach Pizza" style calzone. Genius! Growing up, when his mom would have plans that required her to be absent during dinner, she would prepare spinach, sausage, cheese, onions, tomatoes, and a few secret ingredients on top of dough and... fold it all together! All the rest of the fam had to do was pop it in the oven. Nick was skeptical when I first made a vegetarian version of this dish but since then we've enjoyed it several times.
Tonight's version has swiss chard, smokey robusto cheese, onions, tomatoes, and whole wheat dough. Delicious! This was the only remotely-salvagable image but I thought it was better than nothing! What family meals from your youth have made it into your adult rotation? xN
